16. Prepared Dishes

This Clan and associated families differs from all the others in that it does not deal with a specific class of foodstuff but deals with foods of all descriptions depending on how they are presented and sold. This clan has been retained in the category tree so as to maintain integrity with Article 14 returns but it is recognised that it introduces complexities to the categorisation of food products. Had it not been necessary to retain it for consistency with Article 14 returns then it would not have been used and the products categorised under it would have been categorised elsewhere in the scheme.

16.1. Family 16.01 – Restaurant and Take-Away Meals

This family is to be used for meals which consist of two or more food types which are mixed so as to make sampling of the individual foods impossible or where it is wished to collect information on the entire meal as presented. Where the individual food types can be separated then consideration to collecting separate samples should be given and these foods should be categorised individually as most appropriate. This family should not be used automatically just because a sample has been collected from a restaurant or take-away premises.

The complexity of this family can be demonstrated by considering a sample of fish and chips. If the sample consists of battered fish, chips and added salt and vinegar then it is a meal and should be categorised here. If the battered fish and chips are sampled separately then the fish should be categorised as a coated fish and not as a take-away meal. However to make it even more complex, if salt and vinegar has been added to the battered fish then this is again a multi-component food so should now be considered to be a take-away meal.

	Kebabs	16.01.02.04	Kebabs Type is to be used for complete kebabs sold to be eaten elsewhere. It should not be used for kebab meat alone which should be considered to be a meat product.
	Take-Away Meals - Other Style	16.01.02.99	Take-Away Meals - Other Style Type should be used for meals served to be eaten elsewhere. It should be used for meals which cannot readily be classed as British, American, Oriental or Indian.

16.2. Family 16.02 – Ready-Made Meals

This type is used for many samples that are collected for microbiological examination and different standards are applied depending on whether or not salad or cheeses are present.
	Sandwiches Without Salad	16.02.03.02	Sandwiches Without Salad Type should be used for cold-filled sandwiches and filled rolls, ciabattas etc which do not contain a salad garnish. This type is used for many samples that are collected for microbiological examination and different standards are applied depending on whether or not salad or cheeses are present.
	Sandwiches With Cheese	16.02.03.03	Sandwiches With Cheese Type has been retired.
	Rolls - Hot Filled	16.02.03.04	Rolls - Hot Filled Type is to be used where both the roll and the hot filling are sampled. This type should be used for products such as steak sandwiches and for complete burgers (meat patty and bun together) and should also be used for paninis.
	Sandwiches with Cheese and Salad	16.02.03.05	Sandwiches With Cheese and Salad Type should be used for cold-filled sandwiches and rolls, ciabattas etc which contain cheese and a salad garnish, whether or not the name applied specifically refers to cheese and salad. This type is used for many samples that are collected for microbiological examination and different standards are applied depending on whether or not salad or cheeses are present.
	Sandwiches with Cheese and without Salad	16.02.03.06	Sandwiches With Cheese and Without Salad Type should be used for cold-filled sandwiches and filled rolls, ciabattas etc which contain cheese and which do not contain a salad garnish, whether or not the name applied specifically refers to cheese. This type is used for many samples that are collected for microbiological examination and different standards are applied depending on whether or not salad or cheeses are present.
	Sandwiches – Other with Salad	16.02.03.97	Sandwiches – Other With Salad Type is to be used for sandwiches and filled rolls, ciabattas etc which contain a salad garnish and which cannot be more appropriately included in another type (e.g. Seafood)
