Milk – Cow’s Raw Whole Type is to be used for products that consist of milk from cows and which has not had the fat content altered and which has not been subjected to any heat treatment. As the restrictions on the retail sale of raw milk are stringent there should be a presumption that all milk obtained from retail premises has been subjected to some form of heat treatment unless it is positively known that the contrary is true.

Milk - Cow’s Sterilised Semi-Skimmed

Milk – Cow’s Sterilised Semi-Skimmed Type is to be used for products that consist of milk from cows and which has had the fat content altered to be in the range 1.5 to 1.8 per cent and which has been subjected to a heat treatment process with the requirements for sterilisation.

Milk – Cow’s Other Partly-Skimmed

Milk – Cow’s Other Partly Semi-Skimmed Type is to be used for products that consist of milk from cows and which has had the fat content altered to a level that is not in the range 1.5 to 1.8 per cent fat. This includes relatively new products such as “1% Fat Milk” which does not comply with the legal definition for semi-skimmed milk so cannot be named as such.

Skimmed Cow’s Milk

5.2. Family 5.02 – Cheese#

The current categorisation of cow’s cheese has been based on the previous Regulations which specified standards for hard and soft cow’s cheese and also standards related to the fat content of the cheese. Since these Regulations are no longer in force it is not appropriate to categorise cow’s cheese in this way as it causes confusion. The categories have, therefore, been revised so that cow’s cheese can be treated in the same way as has always been possible for goat and sheep cheese with only a distinction for cheese made from raw milk and cheese made from processed milk.
